eco bio organic potatoes with peel, skin... and its natural minerals, fiber, protein, vitamins.. omG!


it is easy
I adapted the original recipe from my Big Brother, Sir Karlos Otxoa, a loyal lawyer and defender of natural liberty with huge skills in the kitchen, wow!


My adaptation:
buy from the trustable provider, we, at #Ekoalde, Navarra

Clean the dirt with running water and smooth brush

Submerge 30 min x kg of clean whole potatoes

Cut it into your favorite shapes

Pasteurize the sliced potatoes
 (62.8°C) for at least 30 minutes and rise up (71.7°C) for only 15 seconds
Separate it from the heat source!

Keep it in pressurized 'tuppers' and immediately refrigerate

This would create a 'mild vacuum' environment

Keep it a maximum of 24 hours at 4ºC

Fry preferably with pork fat or butter

Vegetable oils, no matter if one uses the best extra super virgin hipper saint Olive oil...
the will convert into hydrogenated oils, not good for our human cells
unnatural long-chain fatty acids without double bonds... etc...oopps...

Serve without salt
the client/family will use its Natural Liberty and then add, or not, NaCl...


Easy no?
